Since 2015 I’ve been endulging my culinary interest in the tasty world of Salumi and Charcuterie. Think home made Parma Ham but with a much bigger taste!.

Having attended two training courses on the subject, read several specialist books and the purchase of a Bradley smoker, i have been producing my own cold smoked, air dried cured meats…

Luscious Lonzino – a spicy cured pork loin with generous amounts of chilli, smoked paprika and cayenne pepper. Cold smoked over Apple, then air dried…

    


Bombastic Beef Bresaola – a traditional bresaola recipe using beef top side but tweaked to include a thorough dredging in Chianti to permeate the outer surface of the bresaola. Cold smoked over oak and then air dried…

  

Lean Green Lomo – a green herb cured pork loin with rosemary juniper and thyme. Cold smoked over whisky oak, then air dried…

  
Sumptuous Spalla – a fennel and black pepper cured pork loin, no smoke for this spalla, its just fennel and black pepper, it’s all it needs! Air dried for 7 weeks.


Soon I’ll put together some taster platters including some apple smoked cheddar cheese too…
